It’s summer, which means many of us are trying to opt for lighter and more refreshing drinks. Although iced coffee is great for hot summer days, it can get a bit boring after a while.
If you’re looking for something new, here’s a pumpkin cream cold brew recipe that’s guaranteed to hit the spot.
The end result is a drink that will energize you during long days.

A pumpkin cream cold brew is a refreshing beverage that uses cold brew coffee as the basis and is topped with a slightly spicy and warming pumpkin cold foam, and this is all sweetened with vanilla syrup for a unique touch.

What ingredients are used in this recipe?
To make this cold brew into a special drink, you’ll need a few ingredients that you might already have at home. You’ll need the following components to make this amazing recipe:
- Cold brew coffee
- Vanilla syrup
- Pumpkin purée
- Pumpkin spice mix
- 2% fat milk
- Ice cubes

The 2% fat milk is there as the basis for the cold foam. You will sweeten the cold foam with pumpkin purée and spice mix. You’ll love the flavors of it.
You can use any type of canned pumpkin purée and sweeten it with your favorite sugar or honey for this recipe. Store-bought pumpkin purée will work just fine in this recipe!
I’d be careful using pumpkin pie filling, as this is already sweetened and has added spices to it. However, if you want to use it, make sure to leave some spices out, as you don’t want this drink to get too overpowering.

If you want to sweeten your coffee a different way, you can also use the sweetener of choice. Some alternatives that I recommend are:
- Maple syrup
- Honey

If you’re going to use one of the sweeteners mentioned above, then I suggest adding a splash of vanilla extract to the cold foam; this will give the coffee its unique flavor.

Which cold brew coffee is best for this recipe?
Cold brew coffee comes in many flavors that can change depending on various brewing techniques, the ratio used, the coffee roast, and so much more.
For this recipe, I recommend using a regular cold brew as the basis. This will give you a flavor that is perfect, as it’s not too strong but just perfectly balanced. (And yes, you can use decaf as well)

You can also use espresso cold brew or cold brew concentrate, but these cold brew varieties are much stronger in taste and are a bit too robust for this recipe.
You can, however, dilute the above-mentioned cold brew coffees with a bit of water and then use it for this recipe.
By diluting it a bit, you’ll make sure that the cold brew coffee is not too overpowering and all the flavors are well balanced.
How to make the pumpkin cold foam
Pumpkin-flavored cold foam is super fun to make. To make it, you’ll need a few ingredients. Have a look below for everything you need:
- 1/2 cup (0.12 l) of 2% fat milk
- 1 tbsp (15 grams) of pumpkin purée
- 1 tbsp (15 grams) of pumpkin spice mix (homemade recipe below)
The above-listed ingredients will be the basis for the cold foam. From the amounts listed above, you’ll be able to make 2-3 pumpkin cream cold brew servings.
As I’ve talked about above, you can use any pumpkin purée you have on hand. You can follow the steps listed below for the step-by-step guide to making pumpkin cold foam:
- Collect all the ingredients to get started with this recipe.
- Combine the milk, pumpkin purée, and spice mix in a bowl. Whisk this together until it’s very smooth.
- Then, you can cold foam this pumpkin-flavored milk using any technique of choice.

Making pumpkin spice mix is super easy to do and requires just a few spices that you probably already have at home:
- 20 grams of ground cinnamon
- 10 grams of ground ginger
- 5 grams of ground cloves
- 2 grams of ground nutmeg
- 2 grams of ground black pepper
This spice mix is powerful in flavor and will make for that slight kick in your pumpkin cream cold brew coffee.
It includes a bit of ground black pepper for a stronger aftertaste that works so well in this recipe.
To make the spice mix, simply add the ingredients to a bowl and whisk it together until an even orange color appears; it looks like this:

This pumpkin cream cold brew is the perfect coffee to drink when you're looking for a spicy and refreshing start to the day!
Ingredients
- 1/2 cup (0.12 l) cold brew coffee
- 1/4 cup (0.06 l) of pumpkin cold foam
- 2 tbsp (30 grams) of vanilla syrup
- Ice cubes
Instructions
Now that you've prepared your cold brew coffee and pumpkin cold foam, it's time to assemble this drink:
- Add the vanilla syrup to the bottom of a tall glass.
- Then, pour in the cold brew coffee.
- Give this a stir, so the vanilla syrup is well-mixed with the cold brew coffee.
- Add enough ice cubes for a refreshing drinking experience. I used eight ice cubes for my coffee.
- Top the drink with the pumpkin cold foam.
- I suggest serving this drink as soon as possible so that the cold foam layer stays intact.
Notes
You can prepare everything a day before making this drink. The cold brew can be steeping overnight, and you can prepare the vanilla syrup in advance as well.
