Cooling down and enjoying a delicious iced coffee on a hot summer day is the best thing ever. But when you’re in a hurry, it’s hard to find time to stop by a coffee shop and pick one up. That’s why many people choose to make their own at home.
This Starbucks drink has been a favorite of mine for a long time, and it’s super simple to make at home.
You don’t have to spend $5 or more every time you want to get your hands on an iced blonde vanilla latte. You can make it at home for a fraction of the price. All you need is some coffee, milk, vanilla, and a few ice cubes.
What is an iced blonde vanilla latte?
An iced blonde vanilla latte is a refreshing coffee drink made using Starbucks’ blonde roasted coffee beans to brew an espresso; this is then topped with vanilla syrup, milk, and ice cubes.
Because this is a Starbucks recipe, you want to use the coffee they use in their coffee shops. This is the Starbucks blonde roast, and it looks like this:
The coffee beans are light roasted and smell amazing. There is a slight sweetness to the coffee beans that you won’t get with darker roasts, which is perfect for this recipe.
This recipe uses just a few ingredients, which is perfect for home brewing. Read along to find out about all the ingredients used and how to make this iced coffee at home!
Ingredients list to make an iced blonde vanilla latte
The most important to any coffee recipe is having amazing high-quality ingredients. The better the quality — the better your coffee will taste.
To make this iced blonde vanilla latte at home, you’ll need the following ingredients:
- Espresso shot made with Starbucks blonde roasted coffee beans
- Whole milk
- Vanilla syrup
- Ice cubes
The freshly brewed espresso shot is the most important component of this recipe. I’ll talk about this in-depth further down.
As this is a recipe you can make at home, you can choose to use any milk you wish. I like to use whole milk for iced coffee recipes in general, so I’ve based the recipe around this.
If you prefer to use lower-fat milk, like 2% fat milk or nonfat milk, then go ahead and use this instead.
You can also choose to use a milk alternative. If you plan on using a dairy-free alternative, let me know in the comments below how this turns out, as I’m excited to hear about this.
To make better iced coffee at home, you can choose to use coffee ice cubes instead of regular ice cubes.
Coffee ice cubes are made with freshly brewed coffee that has been cooled completely before freezing it. By adding them to your iced drink, you’ll dilute your iced coffee with even more coffee, amazing, right?

Let me tell you a bit more about the espresso coffee used in this recipe. After that, I’ve listed the recipe card so you can give this drink a try yourself. Further down, there’s also a recipe for homemade vanilla syrup that is super easy to make.
How to make espresso coffee at home
Now that you know about the right coffee beans to use, you’ll need to prepare the coffee basis for this drink. The coffee that is used in most lattes, including this one, is an espresso.
Espresso coffee is strong in flavor, perfect for recipes like these where there is added sweetness from the milk and vanilla syrup.
It really is the perfect counterbalance to those sweet flavors you’ll find when drinking this iced blonde vanilla latte.
To make espresso coffee at home, you get to choose how to make it. If you like brewing coffee at home, I suggest using a Moka pot or AeroPress. These coffee brewers make great espresso-like coffee.
If you’ve got an espresso machine at home, make sure to pull a shot of espresso from it, as this is the most delicious way to make espresso at home.
Do you prefer using your Nespresso or Keurig machine? Then I recommend using a strong espresso coffee pod so it will have the power to cut through the sweetness of this iced latte.

This iced blonde vanilla latte is the perfect drink to enjoy on a hot summer day.
Ingredients
- Shot of espresso made with Starbucks blonde roast coffee
- 3/4 cup (0.18 l) of whole milk
- 2 tbsp (30 grams) of vanilla syrup
- Ice cubes or coffee ice cubes
Instructions
Once you've prepared the amazing vanilla syrup, it's time to assemble to drink:
- Prepare the espresso shot using the technique of choice. I brewed my espresso with the AeroPress.
- Once brewed, cool it slightly with some ice cubes.
- Add the slightly cooled espresso in a tall glass of choice.
- Then, add the vanilla syrup. Give this a good stir, so all the flavors are well combined.
- Add enough ice cubes to fill the glass about halfway. I used roughly 8-10 ice cubes for this drink.
- Lastly, slowly pour in the whole milk.
I suggest serving this coffee with a straw so you can combine all those delicious flavors before drinking it.
Notes
You can also prepare the espresso coffee in advance and placing it in the fridge overnight. This way, you can make this drink in just a few minutes.

How to make vanilla syrup at home
Vanilla syrup is one of those sweet add-ins that are so easy to make at home that I always have some leftovers in the fridge.
If you plan on making a lot of these coffees in the near future, then I suggest making a bigger batch, as it will keep well in the refrigerator for a few days.
To make a batch of vanilla syrup that will be enough for 6-8 servings of this iced coffee, you’ll need the following ingredients:
- One vanilla bean split and deseeded
- 1/2 cup (0.12 l) of cold water
- 120 grams of white granulated sugar
Now that you have all the ingredients ready to go, let’s make this simple vanilla syrup:
- In a small saucepan, combine the cold water, white granulated sugar, and vanilla seeds alongside the split vanilla bean for even more flavor.
- Then, place the saucepan on the stove on medium heat.
- Heat this mixture until the sugar starts to dissolve. This took me about 3-4 minutes, depending on how high your heat is.
- You want to keep stirring throughout so you don’t burn those sugar crystals.
- Once the sugar has fully dissolved, remove the saucepan from the heat and let the vanilla syrup cool.
Now that the vanilla syrup has cooled, you can transfer it to a resealable container for optimal storage in the refrigerator.
As I’ve said above, if you plan on making more drinks than I’ve mentioned, you can double the ingredients.
