Dalgona coffee is made by whipping instant coffee, boiling water, and white granulated sugar together. And today, I’m going to go a step further and add cocoa powder to it.

Whipped coffee has been popular for quite a bit now, and with the upcoming summer days, what’s better than to enjoy a delicious whipped coffee from the comfort of your own home?

Instant coffee is freeze-dried coffee that turns to liquid when mixed with hot water or milk. You can make coffee within a minute if you feel like it. I’m using Douwe Egberts instant coffee, it looks like this:

This coffee recipe is great because it’s easy to make and has a unique taste. Let me tell you how to make this awesome chocolate dalgona.

How to make egg-free chocolate dalgona coffee

This recipe is based on the classic dalgona whipped coffee that many have already made. Most of the time, the chocolate version is made by beating either heavy cream or egg whites together with cocoa and sugar.

However, I wanted to make an egg-free recipe that everyone can enjoy. Using instant coffee just like the regular recipe will ensure that you get that amazing stiff-peak coffee mixture.

It’s also much better to serve and will keep its structure. And the best part about it all is that you don’t have to add any additional coffee as this coffee packs enough caffeine to get you through those tough days.

To make the egg-free chocolate dalgona mousse, you’re going to need the following ingredients:

  • Instant coffee: 40 grams
  • White granulated sugar: 120 grams
  • Cocoa powder: 15 grams
  • Boiling water: 100 grams

The whipped mousse will be enough to serve 5 coffees in total. If you’re expecting to use more than this, I suggest making more from the start and storing it in the fridge, but more on this later.

This recipe will be amazing, and the sugar and coffee flavor will be perfectly balanced; adding the cacao powder to it makes it even more special and gives you that chocolaty flavor.

To make the mousse follow the next steps:

  1. Add the instant coffee and sugar to your kitchen machine or another large-sized bowl when using a handheld mixer.
  2. Pour in the boiling water and start mixing it straight away.
  3. The coffee will start to get a slight foamy consistency. This is your cue to add the cocoa powder.
  4. Keep mixing this until stiff peaks form. You want the mixture to be so thick that you can turn the bowl upside down, and the mousse will not fall out.

Note: I found that adding the cocoa powder from the start will leave a weird taste to the mousse, so it’s better to add it when the mixture has been combining for just a bit.

  • Chocolate dalgona mousse: 45 grams
  • Whole milk: 100 grams
  • Ice cubes

Instructions

Once you've prepared the chocolate dalgona mousse, it's all about serving the coffee. To serve the coffee, follow the next steps:

  1. Add ice cubes to a nice glass of choice. I like to fill it up to about halfway.
  2. Pour in the whole milk and give the ice and milk a swirl with a spoon. This will ensure that the milk stays very cold.
  3. Now it's time to add the chocolate dalgona mousse. I like to spoon the mousse on top of the milk. This way, you get to keep the layers; it looks amazing when serving.

Once the dalgona mousse is added to the drink, you're ready to serve. I like to stir the mixture before drinking, so the flavors combine nicely, and you'll have a well-balanced coffee drink.

Notes

You can totally use a different kind of milk for this recipe. I like to use whole milk as this gives the best flavor that fits the strong chocolate dalgona mousse.

If you want to use lower-fat milk or even a milk alternative, feel free to do so. The coffee drink will still taste amazing.

It’s a really fun process to make the mousse in the first place. But the layering must be one of my favorite things when it comes to this recipe.

You can go all out and make fun designs with the chocolate dalgona mousse as the mixture is so stiff.

I’ve assembled the drink in a way that you can play around with the mousse before drinking it. It will also look super delicious. Have a look at the picture below:

As you can see, you can make many designs with the chocolate mousse; it’s all in your hands. I like making stiff peaks, but you can totally make a clean layer by slowly adding it on top with a spoon and spreading it out.

I also like to sprinkle a bit of extra cocoa powder on top, just so it looks extra delicious and pleasing to the eye.

Hand mixing vs. kitchen machine

I highly suggest using either a kitchen machine or handheld mixer to make the dalgona mousse.

For the kitchen machine, you can simply add it to the bowl of the machine and let the machine do all the work for you. It’s the fastest and easiest way to make the mousse.

You can also hand mix your mousse, but I must warn you that it will take a pretty long time.

The instant coffee needs a lot of whisking before it turns light and fluffy.

Hand mixing the mixture with a whisk will take about 15 minutes until the right consistency is achieved, but if you don’t have another option, feel free to try it.

Another great option is using a handheld mixer and adding the dalgona ingredients to a big bowl. This will take roughly 5 minutes to finish, which is about the same time a kitchen machine finishes it.

There are so many options out there, and they’ll all achieve the same result. It’s all about your preference.

How long can you store dalgona mousse?

As the dalgona mousse is so easy to make, you can easily make it in a bigger batch to save some time and enjoy it the next few days.

Dalgona mousse can be kept well in the refrigerator for two days. After that, it’ll get watery and will taste less amazing.

If you’re going to make a bigger batch of dalgona mousse, make sure to store it in an airtight container, so it doesn’t attract any unwanted flavors.

I recommend whisking through the mixture with a whisk once you pull it out of the fridge. This will ensure that the mousse has its same structure as before.

It tends to get less fluffy when stored in a cool place, and you definitely want those stiff peaks on your coffee drink to make it even better looking.
